Filled pretzels

I adored pretzels when I was a child, but I haven`t bought it in a bakery in ages. I was very inspired with that white, rubber like, salty dressing.
Homemade pretzels
 I was always wondering how to make that dressing. It was real mystery for a long time. But if you want to find out something it must be done. Dressing for pretzels - piece of cake.
Salty dressing for pretzels
INGREDIENTS:
For dough:
Soft flour - 17,5 oz
One egg
Milk - 3 cups
Oil - 1 cup
Salt - 1 teaspoon
Sugar - 1 teaspoon
One yeast (1,41 oz)
For filling:
Dried ham or bacon - 7 oz
Pizza cheese - 3,5 oz

For dressing:
Flour - 1 tablespoon
Salt - 3 teaspoons
Water - 3 tablespoons
Filled pretzels preparation
PREPARATION:
Pour flour into deep pot, put an egg, add oil, lukewarm milk, salt, sugar and crumbled yeast. Knead smooth dough. If it is thinly add some more flour, if it is opposite add more water. You ought to separate dough from the pot without sticking to pot or your fingers. Place the dough onto floured desktop and knead it a little more. Oil the pot where you prepared dough and put the dough back in the pot. Cover it with clean dish cloth. Leave it to rise for about 45 minutes. After that, place it again onto floured desktop and make bowls from the dough. If you want bigger pretzels bowls should be grater.
Cut out ham or bacon and pizza cheese into small pieces. Stretch each bowl with rolling pin. Shape should be long elliptic. Put in some filling and roll it carefully. Do it with all bowls and filing. Roll in each part of dough, using your oiled hands, and make long rod. When all rods are finished it`s time to make pretzels. As you shape one, place it on baking pan. Turn on the even on 390 F. Leave the pretzels to stay for 10 minutes till oven is heating. Bake pretzels for 20 minutes. While pretzels are baking in oven you should prepare salty dressing. Mix flour and salt. Add water on demand and mix it all together until blobs disappear. Dressing is good enough if  it is steadily sliding down the spoon. Pull pretzels out of oven and sprinkle them with the dressing. Bake them back for 5 more minutes. Don`t give them chance to cool down, eat them all right now.

Biscuit cake with bananas

Fast cakes are the best solution for busy moms. Also, biscuit cakes are always favorite for kids so they are the best choice for birthday parties. This biscuit cake is little bit different because contains vanilla filling which is perfectly creamy and is melting in mouths. Best of the bests is pretty easy preparation process and there is no fear of failure. If I make fruit cake I usually choose bananas because they are special taste decoration to each cake.
Biscuit cake with bananas
INGREDIENTS:
For base:
Crumbled biscuit - 17,6 oz
Soften margarine - 4,4 oz
Orange juice - 4 cups
For filling:
Milk - 6 + 1,5 cups
Sugar - 7 oz
Vanilla sugar - 2 packs
Corn starch - 4,4 oz
Four yolks
Margarine - 4,4 oz
Four bananas
Cream for decoration
Biscuit cake preparation
PREPARATION:
Pour crumbled biscuit in a pot, add soften margarine, juice and mix it all together until mixture becomes good for shaping. Place the cake mold on cake plate and arrange biscuit base. Boil 6 cups of milk with sugar and vanilla sugar in deep pot. Separately, mix corn starch, 1,5 cup of milk and 4 yolks.
When milk in deep pot boils add mixture with corn starch and mix it with wooden spoon until it becomes thick. Mix it with mixer few more minutes. Move from the stove and let it cool down. Add margarine and mix with mixer until it becomes nice smooth mixture. Cut out bananas, put them into filling and mix it all together. Arrange filling over biscuit base and put in refrigerator to get tight. At the end decorate it with sweet cream or just cream.

Domestic bread

We do not buy bread in our family at all. I make it almost every day and I am doing my best to serve it warm when my husband gets back from work. It takes short time for preparation and is much better then one from store. Also we enjoy in smell of domestic bread in our home. Sometimes I put sour cream or cheese into the bread and the new type of domestic bread is here. I make it in variety of shapes and this is one of them. I hope you will enjoy.
Domestic bread
INGREDIENTS:
Flour - 20 oz
Warm water - 5 cups
One fresh yeast
Salt - 2 teaspoons
sugar - 1 teaspoon

PREPARATION:
Put flour and salt into deep pot and mix it. Crumble yeast directly to dough and add sugar and warm water and knead nice soft dough. If dough is thinly add some more flour or opposite add more water. You ought to separate dough from the pot easily without sticking to pot or your fingers. Cover the dough with clean dish cloth and leave it on hot place to rise for about one hour. When it is good enough place it on floured desktop and cutout in four parts. 

First two parts stretch and cut just like for cheese rolls and roll it. Place them to the edges of oiled baking pan. Another two parts separate in two more parts. Each of them stretch and roll. Cut them out in several parts and place them in the middle of baking pan. Let them stay for 20 minutes to rise and connect one to another. Place them into preheated oven and bake on 390 F for about 25 minutes. Bread is ready when the crust is nice and rosy. When you pull it out from the oven cover it with dish cloth for couple of minutes. Domestic bread is ready for lunch.

Tiramisu

Tiramisu is usually made of mascarpone cheese, just like cheesecake but in lack of it everyone can improvise. Tiramisu is well known Italian cake which is favorite for coffee fans.In lack of an expensive cheese I found a way how to make it cheaper and now it is very often served on my table.
Tiramisu
INGREDIENTS:
Ladyfingers - 10,5 oz
Coffee - 3 cups
Sweet cream - 5 cups
Cheese cream - 7 oz
Caster sugar - 5 oz
Cocoa - 3 tablespoons
Vanilla sugar - 1 pack

PREPARATION:
Cook the coffee and leave it to cool down.
Mix sweet cream, vanilla sugar and caster sugar with mixer to get filling for tramisu. 
When filling becomes tight add cheese cream and mix it a little more.
Dip ladyfingers into coffee and arrange it in a deeper baking pan.


Put the filling for tiramisu over ladyfingers.
Do it again until you spend all material.
At the top of tiramisu should be ladyfingers which I sprinkle with cocoa.
Leave tiramisu in refrigerator for hours to get cold well.
Cut tiramisu in squares before serving.

Chestnut cake with choco bananas

It is very easy to prepare this chestnut cake. You don`t even need an oven to make this cake. Taste is amazing and that is the reason why chestnut cake is very often in my kitchen. I also like to make it for special occasions, someones birthday and everybody are always satisfied.
Chestnut cake with choco bananas 
INGREDIENTS:
Cream - 20 oz
Cold sparkling water - 4 cups
Ground biscuit - 10 oz
Chestnut puree - 14 oz
10 choco bananas 
Vanilla sugar - 2 packs

PREPARATION:
Mix 20 oz of cream with sparkling water and vanilla sugar with mixer for 20 minutes.
Ready cream separate in three parts. 
Put 10 oz of ground biscuit into first part and make crust in cake mold. 


Put chestnut puree into second part and smear over crust.
Put sliced choco bananas into third part and the filling put over chestnut puree filling.
At the end, level up chestnut cake with knife and put in a refrigerator to get cold and tight during the night.

Fruit cake

Combination of fruits and vanilla cream is fascinating so these cakes are favorite to many. Today is the day when my kitchen is going to be decorated with this fruit cake.
Fruit cake
INGREDIENTS:
For crust:
Nine eggs
Sugar - 9 table spoons
Flour - 9 table spoons
For filling:
Milk - 5 cups
Sugar - 8 table spoons
Three yolks
Flour - 3 table spoons
Margarine - 9 oz (1 pack)
Cream - 1 pack (or 2 cups of sweet cream)
Vanilla sugar - 2 packs
Fruits - to taste (pineapple, chary, bananas etc.)

PREPARATION:
Crust:
Mix 3 egg whites gradually adding 3 table spoons of flour. Add 3 yolks and mix it all together. Add 3 table spoons of flour and mix it with wooden spoon. Bake it in preheated oven on 390 F for about 30 minutes. Make three crusts in that way. Cool it down and spray with rum or fruit juice.


Filling:
Scrambled yolks with sugar, flour and vanilla sugar add into boiling milk and cook it on vapor. When filling for fruit cake becomes thick leave it to cool down. Margarine scrambled with sugar add and unite with filling. At the very end, add cream slowly (or sweet cram).
Prepared filling for fruit cake smear over crust. Put fruits over filling but last crust goes without filling over it. Coat fruit cake with cream or fondant. 
Before serving leave fruit cake in refrigerator for couple of hours.

Fasting moussaka

If it is time of fasting you can surprise your family with this delicious meal. If you like mushrooms you can use them and if you don`t you can use soy.
Fasting moussaka
INGREDIENTS:
One leek
One carrot
Rice - 1 cup
Mushrooms - 14 oz
Potatoes - 35 oz
Salt - to taste
One vegetable soup cube
Spices - to taste
Oil or margarine - for roasting vegetables

PREPARATION:
Cut the leek in small pieces and put it in a pot. Roast it until becomes soft. Plane carrot and add it in the same pot and go on with stewing adding some water. Add mushrooms, mix it with carrot and leek, add crumbled soup cube and stew 5 more minutes. Add previously washed rice and spices and stew 2 more minutes. Filling for moussaka remove from the stove and leave it to cool down. 

Peel off potatoes and cut it out in rings. Arrange half of potatoes in pot for cooking moussaka to cover the bottom of the pot. Put all filling over potatoes. Rest of potatoes arrange over filling. Before cooking overflow moussaka with water just to be little bit above potatoes. Roast it in oven on 390 F for about 2 hours.

Green rolls

Green rolls are pretty similar with cabbage rolls just we use greens instead cabbage. I like to prepare it in dozen ways. I usually prepare it in springs and summers when cabbage is out of season. Try this one, it is pretty, tasty and juicy.
INGREDIENTS:
One leek
One carrot
Rice - 1 cup
Minced meat - 17 oz
Greens - 15 leaves
One vegetable soup cube
Salt - to taste
Spices - to taste
Paprika - 1 table spoon
Flour - 1 table spoon
Oil for stew vegetables - by need
Green Rolls

PREPARATION:
Cut the leek in small pieces and put it in a pot and fry until it becomes soft. Put grated carrot in same pot and continue with stewing adding some water. After that add minced meat, mix it with carrot and leek, put crumbled soup cube and stew for 5 more minutes. Add previously washed rice and spices and stew it for 2 more minutes. Finished filling remove from stove and leave it to cool down. Put the greens into hot water for 30 minutes until leaves become soft.
Stronger parts of leaf root cut out to make leaf flexible. Arrange leaves at a bottom of the pot for cooking rolls.Two leaves place on your hand and put filling just enough to completely roll leaves. After rolling arrange it in pot. Do it for all filling. When it is finished pour water to the edge of pot and cover them with last few leaves. Cook it in oven on 390 F for about 2 hours.
Instead of water you can use tomato juice. At the almost end of cooking, pour 1/2 cup of oil in a little pot and heat it to boiling. Add one table spoon of flour, mix it and add one table spoon of paprika and mix it all together. Browned flour pour into pot with rolls of greens, mix it and cook for 10 more minutes.
Serve green rolls with sour cream.

Domestic donuts

If someone says donuts I immediately get appetite. I knead very often but donuts are pretty easy for preparing so this is some kind of an express dessert. There are plenty of recipes for donuts but I modified it for a little so you can try with this one. You will never regret :-)
Domestic donuts
INGREDIENTS:
Flour - 17 oz
Two eggs
One fresh yeast
Oil - 1 cup
Milk - 3 cups
Salt - 1 coffee spoon
Sugar - 5 coffee spoons
Vanilla sugar - 1 pack
Grated lemon or orange crust
Oil for frying - 2 cups
Caster sugar - for sprinkling
Donuts preparation
PREPARATION:
Put the flour into a deep pot and add eggs, oil, milk, salt, sugar, vanilla sugar, lemon or orange crust and crumbled yeast. Mix it all together and knead soft dough. If it is too light add some more flour or if it is too hard add some more milk. You ought to separate dough from the pot easily without sticking to pot or fingers. Cover the dough with clean dish cloth and leave it to rise for about 45 minutes (depends on room temperature).
When it is good enough place it on floured desktop. Stretch the dough with rolling pin and cut out circles with mold or glass. Leave the circles for 15 minutes on floured surface. Heat the oil in a deeper pot and place donuts to fry. It takes few minutes per one side of donuts to be fried. Finished donuts place on paper or serviette to soak spare oil. Sprinkle donuts with caster sugar or vanilla sugar or anything else you want for decoration :-)

Roasted peppers in oil

My favorite salad in winters is roasted peppers in oil. While my husband likes to eat beans with onion I prefer to have it with peppers and garlic. Anytime his parents grill peppers for preparing winter salad they put aside several packages for roasted peppers. Considering this salad it contains fresh garlic which is very healthy especially in winters when we need more immunity.
Roasted peppers in oil
INGREDIENTS:
7 - 8 Peppers
Salt - to taste (2 coffee spoons)
Sugar - 1 coffee spoon
Garlic - 3 cloves
Oil - 1 cup
Vinegar - 4 tops

PREPARATION:
First of all you should grill your peppers. When it is finished put them into a pot with cover (this will make it easier for peeling). Peel cold peppers and arrange it in a pot for salad and add some salt. Cut garlic into small pieces.
Overflow peppers with oil and vinegar and add sugar and garlic. Mix it and cool in refrigerator before serving. After tasting you can add some vinegar if it needs. 
It could be stored in refrigerator for a week so you can make more than usually.

CheeseCake (cheaper one)

This is the cheaper version of cheesecake and is much better if you don`t want to buy mascarpone cheese which is pretty expensive. There are almost no differences in taste. Fruits, which you will use for this cheesecake, is mater of your taste and choice. Preparation process is pretty easy, and by the way, with ordinary cheese it will be very cheap. Well. after all, famous cheesecake could be part of your table.
Cheese Cake

INGREDIENTS:
For Crust:
Crumbled biscuit - 12 oz
Margarine - 3 oz
Milk - 1 cup

For Filling:
Cheese or cheese cream - 20 oz
Sour cream - 2 cups
Caster sugar - 2 cups
Gelatin - 3 packs
Vanilla sugar - 3 packs

For Dressing:
Frozen fruits - to choice
Sugar - 1 cup
Gelatin - 3 packs

PREPARATION:
Let the margarine to stay for one hour on room temperature. Mix it with mixer and add biscuit and milk and knead it all together. Put it into the mold to make crust for cheesecake.
Separately, mix the cheese, sour cream, caster sugar and vanilla sugar. Put 12 table spoons of water into pot and pour gelatin. Mix it and leave it for five minutes to rise. When gelatin becomes thick heat it to melting point with mixing during melting. Pour it into filling of cheese. Mix it all together. Prepared filling for cheesecake pour onto the crust.
Put the frozen fruits into the pot and mix it with sugar. Heat it on burner, mixing it until fruits become soft. Prepare gelatin as mentioned above (with 12 tablespoons of water). Prepared gelatin put into the fruits, mix it well and dress filling cream of cheese. Coll the cheesecake down in the refrigerator for the whole night. In the morning, put down the mold and start with eating. I believe you will enjoy.
