Cheese rolls

Cheese rolls are very atractive to all our guests. Everyone got used to see it if we are celebrating something. Everything else can be served but cheese rols must be on a double. It happens that older women with great cooking experience ask for advice because they are realy soft and delicious. I`ve been preparing them for years and I am able to make them with blankfold on my eyes. Ingredients are given approximately so you can add milk and flour to taste.
INGREDIENTS:
Soft flour - 2 cups
Oil - 1/2 cup
Milk - 1,5 cup
Two eggs
One yeast
Salt - 2 tea spoon
Sugar - 1 tea spoon
Sour cream - 1 cup
Cheese - 10 oz
Sesame - to taste

PREPARATION:
Pour flour into deep pot and add an egg. Crumble yeast directly to the flour, add oil, salt, sugar and milk and knead it. If the dough is thinly add more flour or oposite add more milk. Place the dough on warm place to rise.

Crumble cheese in another pot and mix it with sour cream and you got filling for rolls.
Stretch the dough with rolling pin onto floured surface and cut out into equal triangles. Each triangle coat with a teaspoon of filling. Roll each part in cheese roll and place it in a greased baking pan. Coat each roll with beaten egg with little bit sour cream and sprinkle with sesame seeds.
Bake cheese rolls in preheated oven at 390* F for 30 minutes.

Fasting corn bread

Once upon a time it was basic meal for amost all people in world. Nowdays I am trying to pool out of oblivion. Well seen on holidays, corn bread can be prepared for breakfast, dinner or starter and can be filled with various ingredients like sour cucumber, chutney, leek, paprika and so on. At a time of fasting, especially on Christmas eve, I prepare fasting corn bread wich I usually serve with baked beans. I usually fill it with green parts of leek, it is my favourite then :)
INGREDIENTS:
Corn flavour - 1,5 cups
Corn grits - 1 cup
Wheat flavour - 1 cup
Baking powder - 1 pack
Oil - 1/2 cup
Sparkling water - 2 cups
Salt - 1 tea spoons
Two leeks (green parts)
PREPARATION:
Mix all ingredients together in a deep plastic or glass pot. Add oil and sparkling water. Green parts of leek cut in little pieces and add it in plastic pot. Mix it all together once again and pour into coated with baking paper and well oiled.
Bake it in hot oven for 25 minutes on 390* F untill it becomes golden yellow. Fasting corn bread serve in time of fasting with baked beans or with fish.

Pizza rolls

If we are expecting friends or relatives the main part of friendship are pizza rolls. If we are celebrating someones birthday or other celebration there are several types of rolls on the table. Although the dough for all my rolls is the same in basic, filling is different so the rolls are different. In that way my holiday table includes various foods which act about the same but not even close. One of my favorite are pizza rolls. I use whatever I have in a fridge at the moment (ham, smoked meat or sausage...).
INGREDIENTS:
Flour - 18 oz
Eggs - 2
Fresh yeast - 1 
Oil - 1/2 cup
Milk - 1.25 cups
Salt - 2 teaspoons
Sugar - 1 teaspoon
Ketchup - 3.5 oz
Ham - 7 oz
Cheese - 5 oz
Oregano - 2 tablespoons
Sour cream for coating - 1 tablespoon
Sesame or cumin - for sprinkling
PREPARATION:
Pour the flour into a deep pot and put one egg, crumble the yeast directly to the flour, add the oil, salt, sugar and milk and knead it all together. Place the dough in a warm place to rise for about 45 minutes. Stretch the dough with rolling pin onto floured surface and cut out into equal triangles. Each triangle coat with a teaspoon of ketchup which was previously mixed with oregano. Put the ham and grated cheese over ketchup. Roll each part in the pizza roll and place it in a greased baking pan.
Coat each roll with beaten egg and a tablespoon of sour cream and sprinkle with sesame seeds or cumin. Put the rolls in preheated oven and bake at 200 degrees for 30 minutes.

Cake lazy hostess with strawberries

According to vary name of this cake conclusion is it is very easy to prepare. There are a lot of housewives who do not like to bake crust and also to cook filling. This cake, lazy hostess with strawberries, is loved by youths and elders. What thrills me, it can be prepared using variety of different ingredients (instead of strawberries...). Every single time I get brand new unique flavor and each one is my favorite.
INGREDIENTS:
Vanilla cream - 18 oz
Sparkling water - 2 cups
Gelatin - 1 pack
Vanilla sugar - 2 tablespoons
Ground biscuits - 10 oz
Strawberries - 10 oz
Chestnut puree - 14 oz
PREPARATION: 
Whip vanilla cream up with water. Add 2 tablespoons of vanilla sugar. Soak gelatin in 4 tablespoons of cold water and wait to swell and melt in on hot stove. Add gelatin to cream and mix it all together. Whipped cream divide into 3 parts. Put the ground biscuits in the first part and make crust of that in a mold (10 in wide).
Put the chestnut puree, which was standing for a while at room temperature,  in the second part. Mix it all together and arrange over the crust. Put the sliced strawberries in the third part. Leave the cake in a fridge for several hours to tighten and then remove the mold.

Instant dough with cheese

When I think of dough with cheese I instantly become hungry. But, very often when I buy it tastes pretty fat and I don`t like it. All that fat is not good for stomachs so I decided, few years ago, to made it myself. At that time I was not proficient in kneading. Preparation of this dough is pretty easy and someone should not be a master of kneading to make it. Just follow measures and instructions and you will make it. It does not take lots of time and experience. Only you need is little bit of willing and you will be surprised with your success.
Crispy outside and airy inside this doughs will definitely win your taste.
INGREDIENTS:
Eggs - 3
Flour - 14 oz
Crumbled cheese - 18 oz
Baking powder - 1 pack
Salt - 2 teaspoons
Oil - for frying

PREPARATION:
Mix the flour and baking powder. Add eggs, cheese and salt in a pot with flour. Knead the dough until all ingredients are nicely combined. Remove the dough from the pot and place it on a floured surface. Cut out rectangles 0,2 in thick.
Place the dough into hot oil and fry until become golden on both sides.There is no necessities to stand them before frying or to be squeezed of fat. As soon as you remove it from frying pan it is ready for serving.

Salty strudel with chard and cheese

We celebrated Easter in a village where my husband`s father grows fruits and vegetables in his garden. I brought plenty of fresh foods to my house. Most of it was shard because it is known we all love it and I can prepare almost every meal from it. Since I follow variety of culinary sites I spotted sweet strudel recipe. Suddenly I got an idea how to make salty strudel with lots of chard I have in a fridge.
INGREDIENTS: 
for strudel:                                                                               for filling:
Flour - 18 oz                                                                          Chard - 25 leaves 
Eggs - 2                                                                                 Crumbled cheese - 18 oz
Fresh yeast - 1 pack                                                               Salt - 2 teaspoons
Oil - 1/2 cup                                                                           Sour cream - 4 tablespoons
Milk - 1,5 cups                                                                       Egg - 1
Salt - 2 teaspoons                                                                   Sesame seeds - for sprinkling
Sugar - 1 teaspoon
Butter - one half (4,5 oz)
PREPARATION:
Insert flour into deeper pot and add eggs, oil, milk, salt, sugar and crumbled yeast. Mix it all together and kneed compact soft dough. If the dough is not compact add some more flour or if it is so hard add some more milk. Dough is good enough if one can separate it from the walls of the pot without sticking to fingers.
Cover the dough for strudel with a clean clothe and leave it to stand for about 45 minutes.When the dough has risen take it out to the desktop previously sprinkled with flour and divide it into three parts. Each part stretch in a circle. Melt butter and coat each dough circle. The circle cut out as a windmill (see photo), and overlap one end onto another.
 
 Leave the dough to stand overlapped for about 20 minutes. During this time clean and boil chard leaves. Chop it and mix it with cheese and 3 teaspoons of sour cream and add salt. One teaspoon of sour cream leave aside for coating finalized strudel. After 20 minutes stretch the dough and put the filling on it. Roll the dough in strudel taking care not to be overtightened.

Mix sour cream (one teaspoon) and an egg and coat strudel and sprinkle it with sesame. Leave the strudel to stand for about 30 minutes and bake it in hot oven on 200 degrees for 30 minutes. When it is finished take it out from the stove, cover it with clean cloth and leave it to cool down. Cut out salty strudel and serve it with yogurth or sour cream.

White wine sticks

These fast and light sticks are required appetizers and snacks for your friends. Their appearance is interesting and taste is nice and crisp. Besides the rolls, these sticks are great to snack. You have probably seen them in many shops but their taste can not be compared to domestic ones. It is not hard to make them and sticks can last fresh for several days. Believe me, you will not get enough. Super fast salty snacks, white wine sticks, are snacks which are very easy to be made, takes little bit of time and effort. Result will be seen with the first bite of your guests.

Since I always make it when guests are expected, I always use those measures. Of course, you can reduce it twice if you want.
INGREDIENTS:
Flour - 40 oz
White wine - 1,6 cups
Oil - 1,6 cups
Salt - 1 teaspoon
Baking powder - 1 pack
Egg - 1
Poppy - 1,7 oz
Sesame seeds - 1,7 oz
PREPARATION:
Knead the dough with flour, wine, oil, salt and baking powder. Roll the dough with rolling pin using the upside down baking pan from the stove as a background and a kind of mold. Place the dough on the pan and roll it to make it slightly less than 0,4 inches in thick. Coat it with beaten egg and sprinkle with poppy.
Slowly turn over the pan on the table in that way the part with poppy should be down. Coat the other side with rest of beaten egg and sprinkle with sesame seeds. Chop sticks about 0,8 inches wide and about 4 inches long. Twist each stick in spiral on both sides in opposite direction. Arrange sticks in oiled pan and bake it in hot oven for 1/2 hour on 200 degrees.

Lazy apple pie

We are continuing with old traditional recipes. Although I like to experiment and try various world recipes somehow I always get back to our domestic kitchen. I adore food that our grannies use to prepare because I get back to childhood and wish to lift tradition to my kids just like my grandmother did. This recipe exists in my notebook for years. I recognize I haven`t even tried any other recipe for lazy pie because I adore this one and all people who have tasted it were very satisfied with this one. It is pretty easy for preparing and with given quantity of apples is very tasty and juicy.

INGREDIENTS :
for crust:                                                                                 for filling:
eggs - 4                                                                                   apples - 50 oz
sugar - 1,5 tea cup                                                                  vanilla sugar - 2 bags
vanilla sugar - 2 bags                                                             dry grapes - 3,5 oz     
baking powder - 1 bag                                                           cinnamon - 2 coffee spoons
flour - 2 tea cups                                                                    sugar - to taste
yogurt - 2 tea cups
oil - 1/2 tea cup
PREPARATION :
Mix the eggs with sugar and vanilla sugar. Add oil and yogurt and mix again. Pour baking powder in flour, mix it and pour into mixture with eggs to unite it. Half of that mixture pour into oiled brass pot and bake it just until crust shows. It should not be finished just to show little bit of crust (become brown). Plane apples and simmer it for a little just to give a juice.
Add dry grapes, vanilla sugar and cinnamon and sugar to taste. Someone likes more and someone doesn`t. All of that place on previously prepared crust and cover it with second half of dough which we didn`t bake. Bake it in a hot oven on 200 degrees for about 40 minutes. Finished lazy apple pie sprinkle with caster sugar and enjoy with an old domestic cake.

Chicken with Pastry

It was a few years ago when I first heard for Chicken with Pastry while I was working in a glorious Belgrade restaurant. It was served with turkey instead chicken so I was not amazed with the meal. In few days I was very surprised how many people was interested in turkey with pastry so I had to taste it. Experience was very nice and I felt in love with that delicious food and even I hadn`t notice there was turkey inside. After a while I found pastry in a local marketplace and asked around how could I prepare it. You can buy it wherever can buy any paste (shop or marketplace). I prepare it with chicken on my own and every time I overload my stomach that I can`t breath :-) I know it is not in ladies manner but what can I do when I love them. Pastry dates from Croatia.
 INGREDIENTS:
chicken or turkey fillet - 18 oz
cream for cooking - 2 cups
sour cream - 1 cup
soup cube - 1 cube
mustard - to coat chicken
salt - to taste
oregano or other dry seasoning - to taste
 PREPARATION:
Boil the water and soup cube in a pot then soak the pastry in it (could be broken or in a piece as you wish).
Salt the chicken and coat it with mustard and fry it until it is golden colored. Mix the cream for cooking and sour cream in another pot and cook it until boil. Add oregano to creams.
In a clay pot place the pastry on the bottom and after place the chicken fillet and sauce of creams and all again until everything is consumed. Bake it in oven for one hour. When it is finished let it cool for a while and go for it :-)
